Variations

  • Add 1/4 cup shredded sharp cheddar for a more rich and savory experience!
  • To make this gluten free, substitute the flour with your favorite gluten free flour blend.

Ingredients

  • 1/2 cup melted butter (1 cube)
  • 1 cup buttermilk
  • 2 large eggs
  • 2 1/4 cups all purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons maple syrup
  • 4 strips crumbled (or thinly cut) thick-cut cooked bacon (can also use 6 strips regular cut bacon)
  • 2 tablespoons brown sugar (to sprinkle)
  • 1-2 strips crumbled (or thinly cut) cooked bacon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, whisk together all the muffin batter ingredients until well combined. (No need to overmix—just until everything is incorporated.)
  3. Grease a muffin tin with oil or line with muffin papers.
  4. Fill each muffin cup with about 1/4 cup of batter.
  5. Sprinkle the tops of each muffin with a little brown sugar and your reserved bacon crumbles.
  6. Bake at 425°F for 5 minutes. Then, without opening the oven, reduce the temperature to 300°F and continue baking for another 20 minutes, or until muffins are golden brown and a toothpick comes out clean.
  7. Remove muffins from the tin while still hot to prevent steaming, and let them cool for a few minutes before enjoying.
